EVALUATION OF GOOD PRACTICES IN A FOOD AND NUTRITION UNIT IN A MUNICIPALITY IN VALE DO TAQUARI – RS

Abstract

This study aimed to evaluate the sanitary conditions of a FNU that provides food services for a food company in Vale do Taquari, Rio Grande do Sul. This is a cross-sectional, quantitative, descriptive and observational study carried out in September of 2021. To assess the hygienicsanitary conditions of the place, the checklist of Ordinance 78/2009 was used, which has 153 criteria categorized into 12 groups. However, 23 “Not Applicable” (NA) criteria were identified, which were not accounted for, leaving 130 evaluation items. The analyzed UAN presented an index of 81.97% of compliance with the legislation. The categories "Building, Facilities, Equipment, Furniture and Utensils", "Hygiene of Facilities, Equipment, Furniture and Utensils", "Integrated pest control", "Waste management", "Storage and transport of prepared food", "Exhibition consumption of prepared food” and “Documentation and Registration” were 100% compliant. However, non-conformities (N) were identified in the category "Sanitation of Facilities, Equipment, Furniture and Utensils", with 12.5%, "Water
supply" 25%, "Handlers", with 33.3%, "Materials Raw Materials, Ingredients and Packaging", with 60%, "Food preparation", with 26.6% and "Technical responsibility", with 80%, totaling 18.03%. The Unit met most of the legislation's adequacy criteria that represent good hygienicsanitary conditions.
