EVALUATION OF GOOD PRACTICES IN FOOD SERVICES OF THREE FEEDING AND NUTRITION UNITS

Abstract

This study aimed to evaluate the Good Practices in Food Services in three Feeding and Nutrition Units (UAN) in Vale do Taquari/RS. Cross-sectional study, based on observations realized from February to March, 2021, taking in consideration the recommendations from Portaria nº
78/2009, which shows a checklist with 153 evaluation criteria divided in 12 categories. Each UAN was classified according to parameters established by RDC nº 275, from October 21st, 2002, that separate categories according to the percentage of the compliances fulfillment of each group, that are: Group 1, with 76% and 100% of compliance in the evaluated items; Group 2 with 51% to 75% of compliance in the evaluated items; Group 3 with less than 50% of compliance. The three UANs presented a total of compliance above 50%, being categorized in Groups 1 and 2, highlighting that all the units present a satisfactory control related to the good practices of manipulation. It was verified that the food services analyzed were well appropriated in relation to the good practices, however, some criteria showed inadequacies that need to be
evaluated so that they do not harm the good practices in these services and make possible offering safe food to the diners.
